This light French toast has always been a “treat”. Even though this recipe uses just a few ingredients and less than half an hour of your time to make a large batch of puffy French toast with berries.

In this post, I’ll walk you through my quick and easy French toast recipe, as well as which ingredients work best.

Bread is the key to perfect French toast. The truth is, if the slices aren’t too thin, you can use many different types of bread for this recipe (including sandwich bread).

Top tip: make sure your bread is dry. It doesn’t have to be “stale” because that could mean less flavor. For the “quick dry” method, place the sliced bread in the oven and bake for about 15 minutes at 300ºF/150ºC, flipping halfway through. Alternatively, leave in the oven overnight (heat off).

Here are some tips for choosing ingredients.

  • Bread: I use mainly buns. You can use whole grain, yeast-free bread, etc.
  • Milk: I like to use whole milk for the best flavor, you can also use coconut milk.
  • Spices: cinnamon, nutmeg, vanilla (extract or paste) and lemon extract or a little lemon/orange zest (optional).

Ingredients
  • 4 Medium Sliced (144g) Wholemeal Bread
  • 4 Medium Sized Eggs
  • 1 Tablespoons (15g) Low Fat Spread
  • 4 Tablespoons (60ml) Semi-Skimmed Milk
  • 12 (160g) Strawberries
  • 80 (160g) Blueberries
Instructions
  1. Crack the eggs into a bowl and whisk with fork, then add the milk and whisk further.
  2. Hea thet low fat spread in a frying pan.
  3. Soak the bread in the egg and place in the pan.
  4. Cook until each side is golden brown.
  5. Slice the strawberries in half and serve the fruit on top of the toast.
