This vegan white bean salad is perfect for a quick lunch, a light dinner, or even a tasty snack throughout the day. It’s great, dairy-free, gluten-free, oil-free and delicious!

It is wonderful on its own, served with crackers or as a sandwich in pita bread or in a roll. And it cooks really fast!

    • White beans

    • Cucumber

    • Bell pepper

    • Green onion

    • Fresh parsley

    • Lavash

    • Yoghurt dressing

This easy recipe is a great way to use up any leftover cooked beans you have in your fridge.

Red bell peppers, garlic, and a blend of Middle Eastern zaatar spices give this creamy yet low-fat white bean salad an amazing flavor.

Vegan White Bean Salad is perfect for a quick lunch, a light dinner, or a tasty snack throughout the day. This recipe is a great way to use up any leftover beans from your fridge.
Ingredients

For the white bean salad:

  • ½ cup cooked white beans or 1 15-ounce can, rinsed and drained
  • ½ cup diced cucumber
  • ¼ cup diced red sweet pepper
  • 2 chopped green onions
  • 2 tablespoons fresh chopped parsle

For spicy yogurt dressing:

  • ¼ cup unsweetened yogurt
  • juice of ½ lemon
  • 1 teaspoon mustard
  • salt/pepper to taste

For the pita sandwich:

  • 4 large leaves of red leaf lettuce or your favorite greens
  • 4 pita pockets
  • 2 tablespoons fresh chopped parsle
Instructions
  1. Combine all white bean salad ingredients in a bowl. Postpone.
  2. Mix all the ingredients for the spicy dairy-free yogurt dressing in a small bowl.
  3. Pour the dressing over the white bean salad and toss well.
  4. If serving a pita sandwich, place 1 lettuce leaf in each pita pocket and fill with an equal amount of white bean salad.
